This came into our house and I initially filed it under useless..

Plus I end up using the ends of the breadloaf that were destine to forever alone..

French Toast is my daytime litmus for a restaurant - calibrated as a result of 10 years of town field work living out of motels and eating on a per diem for most of my 20s..

My diy 2 min version is a solid 8/10 based on syrup delivery and ease of prep. Bonus points for quick cleanup and short turnaround in production.

I am here to tell you a tale of woe and loss. And French bread.

In 2014 I was fortunate enough to be selected by an up-and-coming software developer conference in Kansas City to give a talk. While there, a few of us visited a local establishment called the Westside Local.

They not only had fantastic apple bread, they told us that on Sunday mornings they made French toast using it.

Unfortunately I wasn’t going to still be in town by the following Sunday, but I made a mental note to myself to apply again the next year.

And sure enough, in 2015 they held the conference again, this time in November instead of August so the visit wouldn’t be quite as pleasant, but I was pumped. I made sure to get there Saturday night for the Monday conference, so I could enjoy what I expected to be a fantastic apple bread French toast.

Sunday morning I got up early. Fortunately I was early enough to give a woman a ride across town to her church: she had no car of her own, had previously been homeless, and wanted to get back to the church she attended while she was, but the buses didn’t run on Sundays.

That’s not the tale of woe and loss, although I’m sure there’s a sad story or three there.

No, the tale of woe and loss is when I reached the restaurant to discover that their menu was seasonal, and of course apples were no longer in season.

The conference only ran one more year before shutting down, and I’ve never been back to Kansas City. I still dream about that apple bread and the French toast that could have  been.

I have made something similar and it didn’t turn out quite like the recipe made it out to be. I’m better at pancakes.
